Our first blend inspired all the influences that make Australia one of the great food producers. Very subtle, with a nice fragrance.
And what's more Australian than a nice bit of fresh fish seasoned with native bush herbs, the scent of the seas plus welcome hints of Asia and Europe
Sweet only from Australian carrot, the sea freshness reinforced by Tassie kelp and saltbush. Then we added in traces of marjoram, garlic, cardamom, ginger and kaffir leaf, star anise and curry. A waft of gentle acidity from lemon myrtle. Nothing dominates, but the complexity does so much for fish, calamari, shellfish and more. Works nicely on lamb and vegies too.
